Instructions

  1. Preheat oven to 300°
  2. Sift almond flour, 1 cup of powdered sugar, and 1 teaspoon of matcha. Set aside.
  3. Beat egg whites until foamy, slowly add sugar, beat to stiff peaks.
  4. Gently fold in dry ingredients until batter flows like lava.
  5. Pipe onto lined baking sheets. Tap tray to remove bubbles.
  6. Let sit 30–60 min until surface is no longer sticky.
  7. Bake for 15–17 min. Cool completely.
  8. For filling, beat butter, vanilla, milk, and remaining powdered sugar and matcha powder until smooth. Add more milk if needed.
  9. Sandwich cookies and refrigerate for 24 hrs for best texture.
  10. Enjoy!
